I want to built an electric bike as well.
Where I live it's flat almost everywhere, so that's good^^
I want my bike to look seamless but it should still have a lot of power.
I want to deploy the batteries like that:

I don't know what kind of bike I will use, but probably something like a mountain bike because I think that quite high speeds will make suspension and good brakes a must have.

I want to use a pressure sensor like this to accelerate the bike.

Like that I could use my Index finger to accelerate.
the sensor could be deployed under the rubber
This would look very stealth and would offer an awesome experience; jump on, put pressure to your index finger and fly
And this motor is the best one I found.

That would only make like 700 watts right?
Is there some kind of batteries or power packs that you would recommend for my purposes?
Is it possible at all to get some range (like 40km) and speed (like 70 kmh) and a good acceleration like this?
With what kind of volt and Ah output should I even supply this motor?
I know all this seems like really really messy, but sometimes I just need people to help me and get my plan straight^^
