On a KT lcd3 display section c1 is I assume referring to the pas cadence sensor by the pedal , since mine is on the right and the motor turn in the correct direction I assume I use the left side of the table?
question1 what if the number of magnets on my sensor do not match the table?

question 2 since this is effectively a on off switch only what effect does
a) selecting a greater or less number than the sensor have?

b ) or alternatively would selecting a higher number make the motor cut in more responsive?

I have a 7 speed Shimano hub which to change down on a hill requires a break in pedalling and takes a quarter turn of the pedal before the motor cuts back in.

I know I could use a hand throttle during the gear change but they are illegal in the U.K. so let’s just ignore that option.
 
The controller wants to see several pulses in order to determine that you are pedaling and not just accidentally nudging/adjusting the pedal when stopped, so you aren’t launched into traffic, etc. if you have 8 magnets, it may want to see 4 or 5 pulses before assisting, for instance. Yes, you can fool it to provide assistance faster or slower by entering more, or fewer magnets. Fewer than the actual number will have assist kick in faster. Be careful, or it could cause some embarrassment at the intersection.
 
Now when I look at the controller options there is no way of setting up how many magnets there are on the pas sensor, so regardless of the magnet number 00 will give the highest setting and 02 the lowest. This means you cannot fool the pas responce by using less magnets than you have. Correct?

You didn’t mention how many magnets your sensor has, but sounds like it is 5. Yes, 00 will provide the fastest response.

I have I think 10 magnets it’s a bit hard to count tbh.
