To change the behavior, you'd probably have to change the controller and display to one that has the specific behavior you want it to have.
You may lose other features you have now, or connections to other things on the bike if they are run by the existing controller.
You may also have to cut and splice connections from new controller/etc to orignal stuff still on the bike, so you may need to carefully note down where all the individual wires inside each cable go before disconnecting things. Depends on whetehr the original and/or new parts use "standard" (ish) connectors / pinouts (there isn't really a true standard, but there are a growing number that use Higo/Julet connectors and the same pinouts on the plugs).
