I've been having issues with my pedego interceptor shutting itself under load. After checking the battery, I noticed there was a bit of damage on the negative terminal on the discharge port and I think it has been arcing.

I want to replace it, but I'm not even sure where to begin - does anyone know where a replacement discharge port can be found?

Arcing: yes. But not because of too high current, but because there is no anti spark protection on your system preventing arcing every time your plug in the battery. If you have a power off switch on the battery, USE IT before plugging in the battery. If not, search this forum for anti spark solutions. Pretty easy to implement.

To repair the battery, you need to find a spare part matching your battery. Perhaps start on aliexpress.com

Now all of this most likely won't solve your shut down problem. Sounds to me like undervoltage protection because batt voltage drops too much under load. Check battery/cell shape.
