That battery will be a problem for a high powered setup. It has a max continuous discharge of just under 1C. it's great for a low powered motor, but you'll kill it swiftly with a high powered bike. 29E cells are not high output cells

Since LAebikes wants to try to claim this as a 60A continuous battery, I'd be reluctant to trust them any further.

The motor depends on what you want to do with the bike. If you're looking for hole shots up to 50mph, then the MXUS would be a good cheaper motor, but both the MXUS and the TC4080 need 100 volts to reach 50mph. If you plan to cruse at 50mph, then I think you're building the wrong kind of bike. The TC4080 will overheat in 16 minutes on flat ground at 50MPH, and that's just the start of the problems.
