What is the safest motor housing temperature, with and without thermal inside packing?
I would like to add an external temperature sensor, on the motor casing, because I do not
want to disable the Throttle by adding an internal sensor. Thanks,

Sorry, I didn't know that.
No problem, but imho it is more usefull to ask these sort of questions in a central topic.
As you can see there, a lot of information is already there and it is easier to search also.

Thanks for the link as it supplied me with a lot of info and answered all of my questions.
I have not experienced any overheating problems, but since I will have to disassemble the drive
assembly, to replace a burnt controller, I might as well improve the motor heat dissipation.

If you mean that you don't feel a lot of heat on the case, you can't know that. It always will be touchable.
Because of the isolating airgap between motor and case you can't feel the heat of the motor.
That is why heatconductivity material is needed. Flowing air, while riding, can cool the motor.

I have for years a digital thermometer on the motor (not connected to the controller). I have reached temperatures up to 105 ° celsius and the engine still runs great.
With the pads I rarely go above 80 °.
Enduro bicycle, used off-road.

For the complete story
You measure the temperature inside the case on the bare motor and place the pads between stator and casecover?
Or have also pads between bare motorflange and case, as in the wiki?.
