What voltage should I run my batteries to?

It's a 24v system. I'm getting a digital meter to mount on the handlebars but I need to know when to stop running. My controller doesn't have low voltage shutoff. I've looked at other controllers for 24v systems and they shut off at 20v. That would mean both batteries are at 10v. I've heard you should never run a 12v lead acid below 12v.
 
Yes, you will be able to charge them.

Important! Always charge after your ride, be it a full discharge or pattial, charge them.

Sla's need to always be charged. Maybe not at the store or middle of your ride, but don't leave it discharged overnight if possible.

Typical LVC for a 24V lead battery system is 21V. That's not a resting voltage, but the voltage under load. Resting voltage with throttle released would be higher than that. A wag would be close to 24V, although I never measured it.
