Are they really lighter in the same sizes (17-3.0 19-2.50-2.75)? Any experience with them? I already have the rims and I like the size combo, just need to come up with a bit lighter tires.

that should be lighter than the lager diameter 19" wheel..
and you may consider a bit narrower tires..
17x2.5 or 17x2.75 would be lighter than 17x3 tire..
