For now just connect these ones:
1 phase cables to the motor
4 Main power from the battery.
8 Hall sensors
9 Throttle
Those are the only ones necessary to run the scooter. I'm very confident 9 is the throttle, this color combo was used on pretty much every controller I've seen so far. In case you aren't sure, just use a multimeter and check the voltages. Red should be around 5V, black should be ground and green should be the signal. There's not much risk to connect it to your throttle, even if it's not the right one.
The other cables are just gadgets, you can figure them out later by trial and error. The 3 speeds switch is easy to figure out (just use a paperclip and shunt one wire to the other until you find which one does what), the brake signals are pretty much useless and somewhat annoying when you drive so I wouldn't use them if I were you, the speed tachometer is easy to find, (just plug a voltmeter between this cable and a ground, spin the wheel full throttle and see if there is a voltage change), and the other wires don't seem to serve any useful purpose at all.
My 2 cents: if you want your ride to be as reliable as possible, try to avoid using all the gadgets. On my builds, the only things that are connected to the controller are the throttle, the hall sensors, and the power wires. Any other stuff is just an added risk of failure, which will make you push your ride back home at some point.
