Build: $5k bike for 72mi Lake Tahoe loop in under 3hrs

The BBSHD max is 30A and 59V, so 1800W. The difference between the BBS02 and the BBSHD is more copper in the larger motor makes torque more efficiently so it heats less and makes more torque for the same power. But so far the stock electronics limit to 30A as far as I can tell. I haven't really played with that, pushing it a lot harder will end up eating chains and cogsets, so it is not a direction I'm too interested in. For a higher power rocket look to the Cyclone, or a Zero motor and run a motorcycle chain on the left side to avoid the problems with blowing out bike chains that are made for low cost, human power and gear shifting. Or use a big heavy 3KW hubmotor which does quite well with bursts of 6KW.

However if you want a bicycle, the BBSHD is a good compromise between weight, power, noise, ease of installation, and plug and play operation.
