I took the Ikea Fantast apart today. Couldn't be easier. The L shaped metal probe is crimped so that the thermo/wire stays in place. I used a big pair of pliers and simply squeezed the crimp until it expanded open. You can then easily slip out the thermometer sensor out of the stainless steel probe. There is no glue or adhesive holding the sensor in place.
The temperature sensor is actually just the wire. I guess it just picks up on the hottest section and reports that as the probe temp. There is a very small exposed section near the end with a small brass colored bit, but I don't think that would be the sensor.
The display is also perfect for an ebike. It has a Celsius/Fahrenheit button. You set the alarm beeper with the up button and down buttons. The max temp is 266 degrees F or 130 degrees C. The beep is pretty loud in a quiet room but probably won't cut it when you're riding.
The back has a pull-out U shaped metal stand and also a magnet embedded so you can mount it to your oven!
The connector to the meter is a simple jack and should be easy to extend with an extender. I need to find out what size it is, but it looks like a typical headphone sized mini-jack except that it's mono.
It looks like it would be easy to attach the temp sensor to the inside of your motor. I would imagine some silicone sealant would do the trick. You can even attach the sensor to a fairly long area since the sensor is long. It should also be very heat tolerant since it's designed to go in an oven.
All-in-all, it's a great little thermometer that looks perfect for use as a remote temp sensor.
