E-Bike cop proof?

The Side Scan Sonar Unit I used to use, searching for logs and such, underwater, had a magnetic switch in the "Fish", towhead. All you did was slide a magnet over the correct location of the switch, and slide it a little, to turn the switch off or on.

That could be added somewhere in a system, to make a hidden "Low-High" circuit.

I have reviewed the manual, but I have not tried it yet. The Cycle Analyst uses a Proportional-Integral feedback loop on speed. When the speed exceeds the setpoint it reduces the throttle output. If the speed stays above the setpoint (you are pedaling) it will reduce the throttle to zero and hold it there until speed drops below the setpoint. It has an over-ride on the throttle, so even if you give it full manual throttle it will zero out the throttle to the controller.

Quebec power-assisted bicycles are often classified similarly to standard pedal bicycles. They do not have to meet the conditions defined within the Canadian Motor Vehicle Safety Regulations (they are not classed as "motor vehicles"), but they do have to comply with federal regulations that define Power Assisted Bicycles. The Quebec Highway Safety Code defines a power-assisted bicycle as a bicycle with an electric motor. PABs are permitted on the road in the province of Quebec, but they have to be 12 and over to ride the electric bicycle and if they're under the age of 18, they have to wear a helmet.

Yeah, we have a free pass here. They don't even enforce the minimal regulation, as far as I could experience. Let's hope we have a few more years of freedom ahead.
 
Here in Mesa, Tempe, and Scottsdale AZ we have zero problems with our scooters.

I ride (daily) through shopping centers, down sidewalks, bike lanes, etc and have never been stopped for anything other than questions about the scooters. I eat lunch nearly everyday at a local eatery that local Tempe officers frequent, and they have never once said anything about legality.

I am glad, and lucky they are so tolerant here!
