Ok, so life got in the way, and my entire plan went awry, so I am trying to re-start this project. To Recap: I bought the TCDM IGH

https://ebikes.ca/patterson165-b.html. I believe I have most of the parts required, but I have several issues I need to overcome, to wit:
I have the crank installed, but am having issues finding a cable stop so I can shift it... I also need to come up with a way to shift it on the handlebar. I also was trying to set up for pedal assist, but mine did not come machined for the PA magnet plate and I am not 100% sure I can cobble that together.
I bought the rear rim built with the TCDM IGH but I am not sure if I can re-use my old sprocket or if I need to get a different one. I am also thinking I need to get a torque arm or two... I have been around bikes my whole life but I am realizing that I have never BUILT bikes so there are significant gaps in my bicycle knowledge.
I have several 56V 5aH EGO batteries and a weather resistant dual battery box zip tied to my bussle rack at the moment pending me coming up with a more secure mounting system. Actually I sacrificed an EGO snow blower for the cause...

I can wire these either in parallel, to run both at once giving me 10aH or with a switch to run one, then switch to the other. I also have easy access to the BMS wires (there are 4 blades on the battery connectors). I have this bookmarked:

I have a set of Versabars
https://www.terratrike.com/product/versabars/ to give me more real estate to mount things (because the stock handlebars are so short....)
I have brake levers with the electric connectors for regen, but I am not sure how to adjust them to actually get regen while I am braking since the actual brakes are left and right side only discs with no provision for any rear brake. So it seems I should be able to adjust this that a light pull activates regen before the discs actually stop me...
