Help defeat optical throttle!

Greetings from Seattle! I am trying to defeat/work around this controllers whacky throttle setup the first pic shows the emmitter the second pic shows the receivers. I’ll add more pics after I post this, using my phone makes this tricky.:

Underneath the optical circuit. I’m hoping someone with more electronics skill then I can look at this and give me an idea how to push the controller with a 5v+ ball throttle…

So there's no wire between the throttle and the controller? Usually I'd just throw an oscilloscope on that and find a way to produce the same signal. It's almost always analog voltage up to 3 or 5V or PWM pulses of different lengths either up or toward ground. Sometimes CAN bus messages, I suppose.
