Hot Rodding the Anza Motorbike

I love the looks of this new Anza bike from Monday Motorbikes. I think they did a great job with the design (visually, anyways)... retro-70's U-shaped frame, simple lines, nice battery/gas tank. One drawback is no full suspension.

They have 2 version, 500w for $1400 (shipped, w/coupon), and a 750w for $2400. They claim the 750w can do 35mph, which seems optimistic for a Bafang 750w geared hub motor. I currently have the G060.750w and it tops out at 28mph with 26inch wheels, so I would think a similar motor on smaller wheels would have trouble reaching 35mph (but someone please correct me if I'm wrong).

What I am thinking about doing is ordering the 500w version, and hot rodding with something more powerful- like a 1500w DD or a MAC 1000w 8t, or open to other suggestions. I'd primarily be riding 20-30mph, but would like the ability to do low 40's to stay with traffic when on more rural roads. I figure going the "hot rod" route vs. the stock 750w will get me more power, while possibly also saving some cash.

I would likely use moped wheels, and add lights, blinkers, mirrors, and upgrade or add another battery.

Asking for some input here...I have no experience building an ebike, but have some knowledge from working on my own M2S R750 and am generally pretty handy. Is this a terrible idea? What are some important considerations?
 
I would probably try to locate a similar frame and build it up from there instead of buying a pre-built bike that you would be stripping the components off of anyway. According to their site is says they are sold out of the current batch and aren't available till December.
You mentioned full suspension would be ideal; why not look for a full suspension frame of similar style? You could even look at a used bikes that have a similar frame.
 
I've scoured Alibaba over the last few weeks looking for just a frame, but haven't been able to find anything similar. Most of the Chinese frames with the 'retro' style that I've seen are just ugly or have really funky dimensions.

I've also considered buying an old vintage moped frame (or stripping an old moped)- but worry it might be a bit more than I can handle at this point with my limited experience.
