Sprocket suggestions eMTB?

I've settled on a motor(s) x2, and I'm trying to work out my sprockets. I checked out past builds and there seems to be a range.
I weigh 185lbs. I would like torque a little more than speed (I can't foresee myself going more than 25-28mph on flats) because of the hills around my house.

What would be a good a tooth count and ratio?

#25 chain
Rock Star Pro (5 bolts for mounting)
Standard 8" Wheels (so sprkt diam. 4.75"-6.75")
Tacon BigFoot 160s (X2)

Well I'm useing the same motors and I have a 11tooth motor and a 55tooth wheel. That's a ratio of 1:5.5 I get a solid 25mph and that's fast enough for me!!! I can almost start from a dead stop but it cogs just tiny bit so I push a little. I would hear it even higher like 1:6 or more but defenitly don't go lower then what I did you won't good torque. The lowest motor gear I saw was 8tooth and the highest wheel sprocket I saw was 64tooth which is a 1:8 ratio!! I think I would go for a 1:7.

Don't forget what voltage battery you use also makes a difference I am useing 6s. With 10s you can do a higher ratio for torque but still get a high top speed
 
You can use a 14 tooth motor sprocket and 55 on the wheel (both are easy to find) and get a bit of both top end and torque. If you are running dual motors, you'll be able to climb most anything. Try that out and if you need to change things, do it from the motor sprocket. 55 tooth is about as big as you'll want to go due to wheel size.
