I currently have right side twist throttle on a tangent 6kw powered down hill bike. Lots of torque with any input.

I'm used to this throttle with a motorcycle but riding a mountain bike like a bike makes it tough to keep a steady hand. I'm thinking a left thumb would be the best option due to reasons that I agree with here https://electricbike-blog.com/2015/08/27/one-throttle-to-rule-them-all-which-ebike-throttle-sucks-the-least/

From my understanding the Domino throttle I have now is top of the line and as such has safeguards to prevent WOT in failure events. Also the CA steps in to my knowledge...

What are the best options for a left thumb throttle?

The best option is left-hand, half-twist. Way easier to keep a grip on the bars and modulate the throttle.
In the States, Lyen has them and maybe Grin(Ebike CA).

Grin Tech has a newly designed throttle, lemme link you up

On long rides, I'd get wrist fatigue, even from 1/2 twist models. A LH thumb throttle typically never needs to compete for handlebar real estate since the front derailleur system is taken out. I used to have a thumb throttle that activates via vertical up/down action but the cromagnon in me eventually snaps the lever. I like this models lateral forward/backward design which simulates most bicycle shifters and give your hands less to think about.

The hardest part about this is cutting the connector ends and resoldering a matching connector for your bike, and really, it's not that hard of a DIY project. Your CAv3 should keep the bike power under control in case of a short (in my case it was from a heavy downpour). I fixed it by opening the compartment and liberally applying a heavy dose of Boeshield to it.

Ordered the half grip twist throttle http://www.ebikes.ca/shop/electric-bicycle-parts/throttles/t-htwist-slim.html and the T-lever thumb throttle http://www.ebikes.ca/shop/electric-bicycle-parts/throttles/t-lever.html Should be here tomorrow so I might have a chance to test them out over the weekend.

Any ideas how I go from the CA configuration of using the Domino resistor based throttle to the 1-4V halled throttles?

That Wuxing 108X Greentime sells as well.
