What we refer to as programmable controllers should be call
user programmable controllers, since they all have an app/GUI/program made for the end user to change parameters.
e.g. Sabvoton bluetooth app and PC GUI:

That's not what you have, and even if there is a program interface, they're not giving it to you.
My guess is that they program the parameters in by editing the firmware code directly. If you look at any of the OSF threads on ES, you can get an idea of what the code probably looks like, and both the hardware and custom software interfaces that allow ES members to change the parameters and flash the updated OSF firmware.

PS. the single wire "display" connector is just a replication of one of the hall sensor signals. It can be used with a simple/cheap speedo, like on a bicycle, etc.
