is it one mt60 connector to hold all the phase wires on the controller and motor cable end (male/female)?

Yes. All three phase wires get soldered to their own terminal of the plug. Axe the bullet connectors and use a single mt60. It’ll be cleaner and can handle current better than those bullet connectors. You’ll definitely want to double check the colors match up properly.
